- Lightly spray pan or wok with olive oil and using med-high heat brown turkey, add garlic & break up turkey meat so that it’s finely ground- cook approx 5-6 minutes.
- Once browned, add tomatoes (roughly drained), tomato paste and salsa and stir, then turn heat to low-med and cook for another 3 minutes.
- Toast or heat in microwave, taco shells (about 30 seconds) break in half and spoon over the sour cream.
- On the serving plates stack the meat, lettuce and cheese on top of taco shell.
- Can use lean ground beef or Bison if you need a red meat fix or even chicken
- Use low fat Greek yoghurt instead of sour cream – with lemon if you like
